PB & Jam French Toast

Let's get straight on to the recipe so you can have this in front of you ASAP!
Ingredients:
-1 egg
-50g bread (I used smaller sliced multiseed bread)
-Frylight cooking spray 4 sprays
-10g smooth peanut butter
-60g banana, sliced
-30g raspberries & 30g blueberries
Method:
To make the jam you'll place the berries in a saucepan on medium height with a spoonful of water (not too much as you don't want it to be super runny). Leave it on this heat for the fruit to breakdown and the mixture to thicken. Keep stirring occasionally and don't let it burn. (If you're fruit it quite sour then feel free to add a drop of honey to this jam).
Place a frying pan on the hob on a medium heat and spray the 4 sprays of frylight cooking spray in it.
Whisk the egg up in a small bowl with a fork until it's broken up and then dip the bread into this mixture, evenly coated on both sides. Then straight away place it into the hot pan. You want to leave it for a good 3-5 minutes each side so the bread starts to toast up a bit and the egg isn't runny.
When the bread looks golden both sides, place them on a plate and instantly spread the peanut butter on the toast and sliced bananas on top. Place a spoonful of the jam on top of the bananas and then sandwich the bread together. You can then spoon any excess peanut butter and jam on top-purely just to make it look super fancy really!
Option to increase protein content: Serve with 100g of total 0% fat free yogurt mixed with 20g of vanilla whey protein powder (adds 27g of protein)
