Well these squares of heaven definitely didn't last long- especially living with an athlete who says 3 is a normal portion haha!
I had a good 8 bananas that needed using up so I thought, well why don't I make a banana bread! I feel like everyone makes a banana bread when they've got those brown-looking-verging-on-mushy bananas left.
I soon realised I don't have a loaf tin to make traditional banana bread so I turned it into a traybake instead, although I actually think I prefer these squares that give off a brownie vibe!
Let me know what you think!
Ingredients:
50g self raising flour
50g chocolate whey protein powder
10g cacao powder (I used cacao rather than cocoa powder as it's a lot richer so only a small amount needs to be used)
1tsp baking powder
2 eggs (split into yolks and whites)
150g bananas
4 drops vanilla extract
30g honey
1. Mix all the dry ingredients together in a bowl (flour, whey protein, cacao powder, baking powder) and leave to one side
2. In a blender mix the bananas, vanilla extract, honey and egg yolks until smooth and completely combined then pour into the flour mixture and stir.
3. In a separate bowl, use an electric whisk to whisk together the egg whites until stiff peaks form- this can take between 2-4 minutes.
4. Folder the egg whites into the chocolate mixture gently and until well combined. Gently pour into a brownie tray and place in the oven for 20-25 minutes or until you touch the sponge base and it springs back up.
5. Leave to cool for 5-10 minutes and cut into 9 pieces!
You can also freeze these brownie squares to save you from eating them all in one sitting- trust me, I know how more-ish these are!
Macros for whole brownie base:
769kcals, 96.6g carbs, 15.3g fat, 58.5g protein
Macros per 1 square without toppings:
85.4kcals,10.7g carbs, 1.7g fat, 6.5g protein
If you want to add toppings (I added 20g dark chocolate melted and 20g peanut butter melted to drizzle on top) then this takes the macros per square to:
111.6kcals, 11.7g carb, 10.7g fat, 7.3g protein
